2nd Chef - Fulltime

The Morwell Bowling Club has a strong reputation for delivering an excellent, creative and consistent food offering. We are looking for a talented individual to help us continue this tradition. 

The Latrobe Valley is an inland geographical district and urban area of the Gippsland region in the state of Victoria, Australia. The district lies east of Melbourne and nestled between the Strzelecki Ranges to the south and the Baw Baw Ranges, part of the Great Dividing Range, to the north

Our bistro is split across lunch and dinner services 7 days a week, catering for functions ranging from special occasions, birthday celebrations, corporate events and wedding receptions.

About the role

We have an exciting opportunity for a dynamic and motivated 2nd Chef to work with us to inspire the culinary team and assist in overseeing daily kitchen activities. This is a full-time role and includes nights and weekends. 

Key responsibilities

  • Assist the head chef/executive chef in leading and developing the culinary team. Manage and train the team to achieve quality and consistency in all aspects of food preparation and presentation.
  • Assist with development and creation of menus showcasing seasonal, local produce and contemporary culinary trends.
  • Operations: Supervise kitchen staff, including training and development, and performance management.
  • Oversee food preparation and service to ensure quality in every dish.
  • Maintain inventory levels and carry out ordering to minimise waste and control costs.  
  • Work towards meeting food and labour budgets whilst driving sales.  
  • Address any challenges that may arise in the kitchen.
  • Cultivate a sense of community at the Morwell Bowling Club; work closely with all departments to deliver memorable dining experiences and a cohesive team environment.
  • Ensure compliance with food safety standards, and occupational health and safety guidelines.
  • Availability to work nights and weekends is essential.

 Skills & Experience

  • Excellent communication and leadership skills, with demonstrated ability to manage and inspire a high performing kitchen team of a medium size.
  • Knowledge of modern Australian and classic European cuisines and techniques.
  • Excellent culinary skills and an eye for detail, a creative mindset and passion for offering exceptional food.
  • Ability to adapt, multitask, and prioritise while executing smooth service. 
  • Sound knowledge of food safety and occupational health and safety standards.
  • Strong organisational and time management skills.

Qualifications:

  • Relevant trade qualification.
  • Food Safety Supervisor certification is advantageous.

Attention to detail for prep and service will require the ideal candidate to be thoroughly organised throughout service and will be able to utilise time efficiently and possess a fun l can attitude.

Responsibilities:

  • Great presentation also a key, as clean and tidy work space is essential in the kitchen.
  • Maintaining a high standard of food hygiene, safety, infection control and cleanliness
  • Cooking, preparing food (lunch, Dinner and Functions) for a busy bistro
  • Carrying out general kitchen duties as required
  • Assisting staff and customers at the front of house
  • Accepting and receiving of deliveries
  • Enhance workplace culture – display high levels of customer service, contribute ideas and be flexible to meet the needs of the business
  • Able to work a flexible schedule including lunches, evenings, weekends and public holidays
